Most people don't know that Pinot Noir is the most common grape in Champagne even though most Champagne is clear in color. However, by leaving the Pinot Noir grape skins in contact with the juice for just a few days, the grape skins' pigment bleeds into the wine giving the juice a pink or 'rose' color.
