$23(free S/H) The Mediterranean climate dominates the Corbieres region where red wine varietals such as Carignane, Syrah, Mourvedre and Grenache flourish. The Bories family first settled in Chateau Ollieux Romanis in the mid 19th century and has brought the estate up to its premier level with installation of modern winemaking technology, aging cellars and major irrigation systems while preserving the original, ancient stone work and winemaking traditions. Their Cuvée Classique is a composition of 40% Carignane, 40% Syrah and 20% Grenache picked from vines averaging 50 years of age. It is characteristically dark ruby in color, expressing delicate blackcurrants and earthy oak aromas that can be nicely complemented by grilled red meats, poultry or veal.
